I’m not sure about the hardware acceleration, as far as I know it’s just worked for me (or it’s not been working and I’ve just not been aware), but for the bootloader breaking… Honestly, crap like that is why I don’t understand why Fedora is as popular as it is, it’s had weird issues like that pretty much since the beginning.
I’d recommend trying a different distro, maybe Mint or OpenSuSE, but bootloaders breaking on updates should be rare to non-existent
