For me, its soups/stews. Nothing i love more than slowly building the layers of flavor in a big ass dutch oven. Stirring my cauldron of delicious nourishing potion grounds me.

    I love making a huge batch of chili. It’s great for hosting friends or freezing and having later.

    Basically I enjoy anything that takes a long time to cook and where I can play around with incrementally adding things to bring out flavours.

      Chili is a pinnacle dish for sure, i could eat it every day. If youre interested in experimenting with an idea, my partner and I won a chili contest with a poblano chicken chili verde. Basically a roasted poblano soup with braised chicken and white beans added. Plenty of cumin too. Super tasty!
