Wienerbrød, aka bread from Wien was inspired by Austrian bakers (classic “neutral” SCABS!) who came up to work in Denmark during a huge baker’s strike in the mid 1800s. But as is the Danish way, we managed to pump it full of dairy, in this case butter.
But yeah, it is possible that it’s referring to “remonce”, the filling/topping used.
