The point is that the beef industry, while consuming that water, provides a good that is useful. AI data centres do not. The logic that “this thing uses a lot of water so adding anything else that does” is kinda sus, to put it mildly.

That being said, pork belly slays any cut of beef. Beef is grossly overrated.
